Brown beef chunks, then remove and set aside.
In the same pot, sautΓ© onions and garlic until fragrant.
Add beef broth, tomato paste, thyme, rosemary, and beef.
Bring to a boil, then reduce heat and simmer for 1 hour.
Add carrots and potatoes; cook until tender, about 30 minutes.
Season with salt and pepper.
