1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine almond flour, rolled oats, chopped nuts, baking soda, and salt.
3. Add the chopped apricots to the dry ingredients and mix well.
4. In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), and vanilla extract.
5. Pour the wet mixture into the dry ingredients and stir until well combined.
6. Scoop out tablespoon-sized portions of dough and place them on the prepared baking sheet, flattening them slightly with your hand.
7. Bake for 10-12 minutes, or until the edges are golden brown.
8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
