Morning Glory Muffins



Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
Mix Wet Ingredients: In another bowl, whisk together the eggs, vegetable oil, orange juice, and vanilla extract.
Combine Mixtures: Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in Add-ins: Fold in the grated carrots, grated apple, shredded coconut, raisins, and chopped nuts.
Fill Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool: Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
